you must keep fermentation otherwise use fruitsalt that will be given spongeness.

OMG This.is.not kanchipuram idly. Instead of chillies you have to fry .black pepper,Zeera, curry leaves & dry ginger.powder in oil or ghee and then add them in the batter. The batter should be fermented. These are idlies are divine.prasadam in Kanchipuram Varadaraja perumal temple in T.Nadu. Arulmozhiasaithambi.

Do we need to keep batter for fermentation? Can i use Brown Rice instead of White Rice?
